About us
Our olive oil production is a centuries-old family tradition, as old as most of the trees we have. The care of the olive groves and our production techniques are secrets we pass down from one generation to the next.
My name is Carlo Bianchi. In 2000 I began to dedicate my free time to improving the quality of our olive oil, overseeing every aspect of its production.
In 2008 I set about creating the company with the aim of both consolidating my commitment in the wake of the family tradition and producing a superior quality extra virgin olive oil.
The year 2012 was decisive: I decided to change my life by giving up my previous work as a mechanical engineer and take on the new role of an agricultural entrepreneur, full time.

The desire for a more sustainable life style, and the moral duty to take care of the family's centuries-old olive groves, sparked in me a sense of belonging to the land that I could no longer ignore."
The company
We are located in the Montalbano hills in the idyllic Tuscan area of Vinci near Florence, 200 meters above sea level. It is a place where nature, olive cultivation, vineyards and the local community thrive together in harmony, preserving a unique and characteristic landscape that defies time.
Based on our respect for nature, the environment we have around us and our beloved olive trees, the land is continuously farmed according to natural agricultural principles: we use neither fertilizers nor pesticides, we carefully prune the trees, and weed and till the soil. This profound respect for nature prevents us from being classified as biological, biodynamic and integrated in our methods of cultivation.
Spread over an area of 20 hectares, we have around 6,000 olive trees including the Moraiolo, Leccino and Frantoio varieties, a small vineyard for our own family use, a hectare of woodland and a splendid B&B called La Villa Da Vinci.
Our production
Our olives are harvested with the greatest possible care to avoid damaging them. The fruit is pressed the same day, from between four to eight hours after harvesting.
The extracted oil is immediately stored in airtight stainless steel containers and placed in a cellar where the temperature remains constant all year round.
It is then packaged in our cellar and sold directly or indirectly to individual buyers or to larger distributors.
Our olive oil
Our superior standard Tuscan olive oil is the result of a classic blend of three types of olives growing in the region. It has a pleasing, medium-fruity flavour with aromas of artichoke and green olives. On the palate the bitter and spicy notes create a harmonious balanced oil with a mild spicy persistence, providing a rich source of polyphenols, antioxidants and vitamins.

During the harvest season, most of our olive oil is usually sold unfiltered while a smaller part is filtered for subsequent sale.
